WHere is an easy interpretation of a drink featured on the seasonal menu. Designed as a batch pre-mixed that's packed full of tastes of the holiday season, making it excellent for your celebration. Save the extra citrus syrup to use in brunch beverages, sweets, or for another batch of the drink.

Ingredients for the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Cocktail (makes 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Instructions
For the Syrup: Put the listed items into a pan, heat until it reaches a gentle boil, stirring until the sugar dissolves. Next, remove from the heat allowing it to reach room temperature entirely. Pour to a sealable bottle, seal and store chilled, it can be stored for about a month.
Preparing the Premix: Combine the specified liquids in a sizeable container, leave to sit for 60 minutes, then strain preferably using cheesecloth, to ensure it's completely strained.
For serving: Measure 85ml of your cocktail base into your cocktail shaker filled with ice, and stir lightly for a minute until cold. Filter into an cold coupe glass or similar, top with some cranberries adding the final touch by giving it a quick spritz with the mandarin essence above the glass.
